Editor, Debbi Clonts shares a recipe that is a favorite in her family.  Not only does it go well with barbecue, it is becoming a staple gift for both Mother’s Day and Father’s Day.  She says, “It is a great gift for the parents who have everything!”

*Robin Cooper’s Pimento Cheese

8 oz block of medium cheddar cheese

8 oz block of sharp cheddar cheese

7-8 ozs diced pimentos or roasted red peppers, drained

2 green onions, sliced thin

1-2 cups of mayonnaise  (Our family believes in Dukes!)

Grate both blocks of cheese and mix in bowl.  Add one half of the cheese mixer in food processor with pimentos, onions and 1 cup mayonnaise.  Process until smooth and spreadable.  Put processed mixture back in bowl with remaining cheese.  Mix and add mayonnaise to bind. (You can use up to a cup depending on your preference.)  Place in the refrigerator for 2-3 hours until set.  Serve with crackers or fresh vegetables.
